So its the middle of the day and you need something quick to eat. Here is where I have the most difficulty getting a healthy meal. As a stay at home mom you would have thought it would be easy. But unless there are left overs in the fridge I don't get a healthy meal. When I get caught short there are a few quick and simple recipes I stick to.

Follow some of these quick and easy recipes to keep you on track.

Italian Frittata

Serves 2.

Start off by sauteing the chopped bell pepper in an oven proof skillet with a little coconut oil on a medium heat. When they are tender, add in the olives & sun-dried tomatoes. In a separate bowl, whisk together the eggs and milk (not too much whisking though). Next, add the egg mixture to the skillet and sprinkle in the chopped green onion. when the mixture has cooked through a little, add the Parmesan to the top and place in the oven on broil till cooked through. Calories per serving: 296kcal, Fat 20g, Carbs 10g, Protein 20g. This recipe is also high in Iron, Calcium, Vitamin A & C.  I Like to serve this with a handful of spinach on the side for an added punch of iron!! The frittata is great fresh out the oven or can be chilled and eaten the next day (save half for breakfast the next morning)
